Something Very Unique

I was surprised when I saw  canned jackfruit at Superstore's shelf so we bought 2 cans and brought them  home. Seldom I see something unique to cook for viand and young green jackfruit is one of a kind. It's a fruit when it's ripe and to be eaten when it's used as fruit salad or cook it with other mixed fruits for guinatan with coconut milk.

For young green jackfruit the best kind of viand to cook is with coconut milk, shrimps or choice of seafood (crabs, lobsters, red snappers, snails or escargots, baby shrimp paste).

How I cook this young green jackfruit is just a simple way of  using simple ingredients:
You can see the photo of those desired ingredients above: A can of young green jackfruit, 1 can of coconut milk, 2 cups of small shrimps, a piece of ginger, 6 pcs. of garlic, 1/2 medium size onion.

First clean (wash gently) the jackfruit then cut it to thin slices  as shown above. Slice what you need to slice such as garlic, ginger and onions.

Get ready with your wok on the stove (on high heat), pour 2 tbsp. of cooking oil and sauté the sliced garlic, onions, ginger first. Or you can have all the first 3 ingredients in the wok and pour the can of coconut milk, sliced young jackfruit, and shrimps + dash of salt and black pepper > all at once until the viand  boils and simmers. Cooking time: 40 minutes. You can add a cup of hot boiling water if the coconut cream is thick.

I added fresh okra and a piece of green jalapeno pepper to spice up this exotic viand. Serve hot on top of jasmine rice is what makes this yummy good. So delicious!
