I was asked by some acquaintances what I will prepare and cook for Easter Sunday. Good question.Because every family has a way of celebrating special occasions such as Easter Sunday so usually it is a great family dinner or family reunion sort of bonding with loved ones. Well only if all the members of the family are present around the table to enjoy the hearty meal. It is quite sad when one member is missing at the gathering or two members missing by the table to enjoy the meals.
Our Easter Sunday would be just simple, not overtly festive. My hubby and my twin daughter and son will be at home while my eldest son who lives at the mainland will celebrate Easter with his 2 aunts, my sisters in-law (husband's sisters).
So, what I'm planning to cook? My plan is to roast the long pork loin with stuffing then we'll have scalloped potatoes, fresh veggies, steamed rice, pancit and lumpia + crab and corn soup.
However, when I got home after 6 pm last night, my husband roasted the pork loin with mustard, veggies and potatoes in the oven. Oh no!! Then he told me that the oven is acting up. That it keeps shutting off. OMG! Is there a power failure or power shut off? So what he was doing was back and forth at the kitchen to turn the switch off and on the oven again and again until the pork loin's cooked. Our Kenmore stove/oven is electric not gas powered. I was thinking that maybe it has something to do with power switching to alternating current. We live in a townhouse if one unit has no hydro power automatically all the units will have no power (?). Or this kind of situation happens in hospitals or bigger facility when alternating current switched to generators. But maybe our Kenmore stove/oven is getting old. I think we bought our stove/oven in 2016 (together with the dishwasher, and fridge). So maybe it needs new replacement. Because we live in a townhouse and we are just tenants, the owner of the townhouse should replace it. That's what in the contract anyway. The owner provides free appliances: stove/oven + dishwasher + fridge+ washer +dryer including microwave. So, maybe they could replace our stove/oven eh?
That's my kind of oven in the pic (photo taken in 2016 and the oven we are still using in 2026) above. When we moved to the next house, we brought all our five appliances: stove/oven, dishwasher, laundry machine and dryer, and the fridge (+2 freezers). My husband liked fishing and we love fish so we like to have them in the storage. Some of the salmons were canned and smoked.So... I don't know. I hope the stove/oven works today and tomorrow or there is always Plan B or C.
Things happen for a reason... so be it.
Easter Sunday is just like Christmas although in a different circumstances. Christmas is the birthday of Jesus Christ and Easter is the re-birth or resurrection of Jesus the Son of God. BORN TO BE ALIVE! For the Catholics & Christians as what the Holy Spirit had written through the HOLY BIBLE the glorious mystery was revealed and unfold and we the believers believed in it anyway. To further explain the process would be only time will tell for the skeptics for the believers it is what it is.
HOLY SATURDAY! RELAX & BE HAPPY NO MATTER WHAT.
